Carrot Cake Oat Cookies
Serves: Makes 8-10 cookies

Ingredients
1 heaped cup grated carrot (around 1 large carrot)
¾ cup whole wheat flour
½ teaspoon baking soda
¼ teaspoon salt
1 ½ teaspoons ground cinnamon
1/8 teaspoon ground nutmeg
¼ cup coconut oil (or oil of choice)
½ cup brown sugar
1 ¼ cup rolled oats
1/3 cup shredded coconut
1 egg
1 teaspoon vanilla extract
¼ cup raisins
For the glaze
¼ cup white chocolate, melted
Method
Preheat the oven to 180°C on fan bake. Line an oven tray with baking paper
In a medium bowl, whisk together flour, baking soda, cinnamon, nutmeg and salt
In a separate bowl mix together coconut oil, brown sugar, egg and vanilla until well combined. Add the grated carrot and flour and mix until just combined. Fold in oats, coconut and raisins
Using a tablespoon, scoop mixture onto lined baking tray and gently flatten
Bake for 10 minutes or until golden. Remove from the oven and transfer to a wire rack to cool. Drizzle melted chocolate over the cookies
