Cherry & Roasted Beetroot Salad

Cooking: 20 Minutes
Ingredients
2 cups cherries, pitted and halved
2 medium beetroot, peeled and sliced
1 tablespoon olive oil
5 handfuls salad greens
¼ cup sunflower seeds
¼ cup crumbled feta (optional)
Pinch of salt
Dressing ingredients
2 tablespoons balsamic vinegar
2 tablespoons olive oil
Method
Preheat oven to 180°C
Place beetroot on an oven tray and drizzle with olive oil and sprinkle with salt
Roast for 20 minutes or until tender. Allow to cool
In a small bowl, combine dressing ingredients
In a large bowl, combine greens, beetroot, cherries, feta and sunflower seeds. Top with dressing before serving
