Chickpea & Parsley Falafels

Chickpea & Parsley Falafels
Serves: Makes 8 falafels
Preparation: 15 minutes
Cooking: 20 minutes
Ingredients
1 handful fresh parsley, roughly chopped
1 handful fresh coriander, roughly chopped
2x 400g tins of chickpeas, drained and rinsed
½ red onion, sliced
3 cloves garlic, minced
½ teaspoon Cayenne pepper
1 teaspoon ground cumin seeds
1 teaspoon baking powder
½ cup flour
3 tablespoons olive oil
For garnish (optional)
¼ cup sour cream
Lemon juice
Method
In a food processor, pulse the chickpeas, onion, parsley, coriander, Cayenne pepper, garlic and cumin until it forms a chunky paste
Place the mixture into a bowl and add the flour and baking powder, mix well
Using a tablespoon, form the falafel dough into small patties
Heat a fry pan over medium heat and add the oil. Place patties in the fry pan and cook for 5-8 minutes on each side or until golden. Serve with lemon juice or sour cream
