Courgette & Parsley Fritters

Courgette & Parsley Fritters

Ingredients
3 large courgettes, grated
2 garlic cloves, minced
2/3 cup flour
2 eggs, lightly beaten
Handful parsley, chopped
½ cup grated cheese
Pinch black pepper
1 tablespoon olive oil
Topping
Fresh parsley
Greek yoghurt or sour cream
Method
Place grated courgette into a sieve and squeeze out as much liquid as possible
Add courgette to a bowl with eggs, flour, garlic, parsley, pepper and cheese. Stir to combine
Heat a fry pan or skillet over medium heat and add olive oil. Using a tablespoon, scoop out mixture and form fritter shapes in the pan
Cook fritters for 3-4 minutes on each side or until crispy and golden
Serve warm with a Greek yoghurt and parsley
