Crispy Potato & Garlic Fritters
Serves: Makes 6 fritters

Ingredients
2 medium potatoes, grated
½ onion, grated
1 garlic clove, crushed
Pinch fresh thyme leaves (or herbs of choice)
1 egg
3 tablespoons flour
Pinch salt & pepper
3 tablespoons oil
Toppings
Spinach leaves
Avocado slices
Plain yoghurt
Pinch sesame seeds
Method
Place grated potatoes in a clean tea towel and squeeze out any excess liquid
Combine potatoes, onion, garlic and egg in a bowl and mix well. Add flour slowly until mixture comes together. Add salt, pepper and thyme
Heat a fry pan over medium heat and add oil. Add spoonfuls of mixture into the fry pan and flatten. Turn and cook until golden on both sides
Once cooked serve with avocado, spinach, sesame seeds and plain yoghurt
