Cucumber & Herb Gazpacho (Chilled Soup)
Serves: 3-4
Preparation: 10 minutes (plus 60 minutes chilling time)

Ingredients
1 large cucumber, ends removed, roughly chopped
⅓ cup mint, roughly chopped
⅓ cup coriander leaves, roughly chopped
1 garlic clove, peeled
2 tablespoons lime (or lemon) juice
¼ cup jalapenos (optional)
1 cup unsweetened plain or Greek yoghurt (or coconut yoghurt, if vegan)
2 tablespoons olive oil
Pinch of salt and pepper
Garnish (optional)
Mint and coriander leaves
Drizzle of yoghurt
Method
Add all ingredients to a blender and blend on high until smooth. Thin to your desired consistency with water
Refrigerate for 1 hour, or until cool. Serve cold in bowls or glasses with garnish
