Dukkha Honey Roast Yams
Serves: 4 as a side
Preparation: 10 Minutes
Cooking: 25 Minutes
Ingredients
1kg apricot yams
1 tablespoon olive oil
¼ cup Dukkha
1 tablespoon honey (heated until runny)
¼ cup feta cheese
To serve
¼ cup Dukkha
¼ cup olive oil
Handful fresh parsley
Method
Preheat the oven to 200°C
Line an oven tray with baking paper and lay the yams on the tray. Drizzle the oil and honey over the yams
Sprinkle the Dukkha over the yams until lightly covered (the Dukkha will stick to the honey and oil). Cook the yams in the oven for approximately 25 minutes or until tender
Serve topped with crumbled feta and parsley
Optional - serve with a bowl of oil and a bowl of Dukkha for dipping
