Egg Tartine with Fresh Herbs

Cooking: None if eggs already boiled
Ingredients
¼ cup torn basil leaves
2 tablespoons dill leaves, chopped
2 tablespoons chopped chives
½ teaspoon grated lemon zest
2 teaspoons lemon juice
4 eggs, boiled & shelled
4 tablespoons olive oil
4 pieces focaccia, toasted
2 tablespoon Dijon mustard
1 egg yolk
¼ teaspoon pepper
Method
In a bowl, combine mustard, egg yolk and pepper. Whisk mixture and very slowly pour in 4 tablespoons olive oil. Continue whisking until a mayonnaise consistency
Slice the boiled eggs, place into the egg yolk mixture and stir gently. Place the bread onto a serving plate and spoon the eggs onto each piece
In a bowl, combine basil, dill, chives, lemon zest, lemon juice and 1 tablespoon of olive oil. Toss to coat then pile on top of the eggs
