Fresh Pineapple Salad

Ingredients
2 ½ cups pineapple, cut into small chunks
½ red onion, finely sliced
4 handfuls baby spinach
1 carrot, grated or thinly sliced
½ cucumber, sliced, halved
Handful fresh coriander
Dressing
Juice of 1 lemon
2 tablespoons olive oil
Pinch of black pepper
Method
In a large serving bowl or plate, combine the pineapple, baby spinach, coriander, cucumber, carrot, and red onion. Toss well
In a small bowl, combine dressing ingredients and drizzle over the salad
