Grilled Grapefruit with Yoghurt & Mint

Ingredients
4 grapefruit, sliced in half
6 tablespoons Greek yoghurt
2 tablespoons brown sugar
Small handful mint leaves, roughly chopped
Method
Preheat oven to 180°C. Place grapefruit on a baking tray and using a small knife, cut around the grapefruit segments (to make them easier to remove)
In a small bowl, combine the brown sugar and mint leaves. Sprinkle half of the mixture onto the grapefruit
Grill for 5 minutes or until the grapefruit turns golden
Serve each half with a dollop of yoghurt. Garnish with remaining mint and brown sugar
