Ingredients
6 Heirloom tomatoes, sliced
½ cup feta, crumbled
¼ cup fresh mint, chopped
Dressing:
3 tablespoons balsamic vinegar
3 tablespoons olive oil
Pinch salt & freshly ground pepper
Method
Arrange the tomatoes on a large plate or bowl. Sprinkle with fresh mint and feta
Add the dressing ingredients to a small bowl and whisk. Drizzle over the salad and serve
