Herb Infused Hasselback Potatoes

Cooking: 45 minutes
Ingredients
8 medium potatoes
2 garlic cloves, crushed
Handful parsley, chopped (or herbs of choice)
4 tablespoons olive oil
1/4 cup cheddar cheese, finely grated
Pinch chilli flakes
Pinch salt & pepper
Method
Heat oven to 180°C
Scrub potatoes then pat them dry. Make cuts in the potatoes, leaving the bottoms intact
In a small bowl combine the oil, herbs, garlic, chilli flakes and salt and pepper. Drizzle over the potatoes and top with cheese
Bake for 45 minutes or until golden. Serve warm
