Kale Salad with Lemon Dressing

Ingredients
5 cups chopped kale
2 tablespoons olive oil
Pinch salt
2 cups broccoli florets
½ cup grated carrots
¼ cup red onion, diced
¼ cup sunflower seeds
½ cup sliced almonds
1/3 cup feta cheese
Dressing
¼ cup olive oil
2 tablespoons lemon juice
2 tablespoons red wine vinegar
1 clove garlic, minced
1 tablespoon honey
1 tablespoon Dijon mustard
Pinch salt & pepper
Method
Combine all dressing ingredients in a small bowl and mix well
In a large bowl cover kale with 2 tablespoons of olive oil and salt and massage it into the kale leaves. Rub with your fingers until leaves begin to darken and tenderise
Add broccoli, almonds, feta, carrots, red onion and sunflower seeds. Pour over the dressing and toss to coat the salad. Serve at room temperature
