Lemon, Garlic and Parmesan Cheese Roasted Courgettes

Ingredients
Zest of 1 lemon
Juice of 1 lemon
5 small/medium courgettes
2 tablespoons olive oil
2 cloves garlic, crushed
½ cup finely grated Parmesan cheese
Pinch salt & freshly ground pepper
Method
Preheat oven to 180°C on fan bake
Cut courgettes into 4 wedges, lengthwise
In a small bowl, stir together the olive oil, lemon zest and garlic. Place the courgettes on an oven tray
Brush olive oil mixture over the courgette and sprinkle with parmesan cheese. Season with salt and pepper
Bake for 12-15 minutes or until Parmesa cheese is golden brown. Serve warm with a squeeze of lemon juice
