Avocado & Lemon Bliss Balls

Ingredients
2 ripe avocado
12 Medjool dates
1 cup almonds (toasted)
½ cup cashews (toasted)
1 cup of desiccated coconut
2 lemons, zest and tsp juice
1 cup coconut thread
1 cup pitted prunes
2 tablespoons cocoa powder
Method
Place nuts and cocoa to a food processor and pulse to combine then scrape out and put in bowl
Place dates, prunes, desiccated coconut and lemon zest in the food processor and pulse until combined
Mash avocado with a teaspoon of lemon juice and add to food processor with nut mixture and combine everything except the thread coconut
Roll into balls, then roll over the coconut threads
Refrigerate for at least an hour before serving
