Lime Baked Oats

Lime Baked Oats
Serves: 2
Preparation: 5 minutes
Cooking: 15 minutes
Ingredients
Juice of 1 lime
1 teaspoon lime zest
1 large or 2 medium pears (washed & sliced)
1 cup rolled oats
1 cup almond flour
¼ cup chia seeds
2 tablespoons jaggery powder* or 2 tablespoons honey
1 ½ cups almond milk or milk of choice
2 teaspoons blanched almonds or pistachios (chopped)
Method
Heat the oven to 180°C
In a medium bowl, combine ½ teaspoon lime zest, lime juice, oats, chia seeds, almond flour, jaggery powder and milk. Mix well
Transfer oats into a greased skillet or baking tin, arrange pears on top. Sprinkle over almonds and/or pistachios and more lime zest
Bake for 10-15 minutes until the top is golden
Serve it hot with a dollop of plain yoghurt
* Note - Jaggery is a traditional sweetener made by evaporating raw sugar cane juice without separating the molasses from the crystals
