Avocado Salsa

Ingredients
3 medium avocados, diced
5 medium tomatoes, diced
1 red onion, chopped
1 chilli, de-seeded and finely diced (optional)
1 garlic clove, crushed
½ cup coriander, chopped
3 tablespoons olive oil
Juice of 1 lime
Pinch of salt & pepper
Method
Place avocado, tomato, onion, chilli, coriander and garlic into a bowl and combine.
In a separate small bowl, mix the olive oil, salt, pepper and lime juice. Pour mixture over the salad and toss gently to evenly coat. Serve with corn chips, over a salad or with vegetables.
