Mandarin, Beetroot & Mint Salad

Ingredients
4 mandarins, peeled and sliced crossways
2 medium beetroot, peeled and put through spiralizer (or grated)
1 handful mint leaves
2 tablespoons crème fraiche
Dressing Ingredients
Juice of 1 lime
1 tablespoon avocado (or olive) oil
Method
In a small bowl, whisk the dressing ingredients together and set aside
Place the beetroot and mandarin slices on a serving platter
Drizzle the dressing over the salad. Sprinkle with mint leaves and add dollops of crème fraiche
