Mango Salsa

Mango Salsa
Serves: 8 to 10 as a side
Preparation: 10 minutes
Cooking: none
Ingredients
1 mango, peeled and diced (optional)
4 green kiwifruit, peeled and diced
4 gold kiwifruit, peeled and diced
1 garlic clove, crushed
1 chilli, finely diced
Juice of one lemon (or lime)
¼ Red onion, finely diced
Small handful fresh coriander (to serve)
Method
Place all ingredients in a mixing bowl and gently combine
Transfer to a serving bowl
Cover and refrigerate until ready to serve
Sprinkle fresh coriander over the top just before serving
NB: This salsa is fantastic with Mexican food especially tacos
