Mixed Mushroom Rice Bowl
Serves: 4
Preparation: 10 minutes
Cooking: 20 minutes
Ingredients
2 cups mushrooms, sliced
1 medium onion, finely diced
2 cloves garlic, crushed
3 tablespoons butter
1 teaspoon chopped fresh thyme or dried thyme
1 tablespoon lemon juice
1 cup brown rice
Pinch salt & pepper
1 handful of fresh parsley, finely chopped for garnish
¼ cup Parmesan cheese for garnish
Method
Cook rice as per packet instructions. Set aside
Heat a large skillet over medium heat and add 1 tablespoon of butter. Once butter is melted, add onion and sauté until onion is soft and translucent. Add garlic and sauté 1 minute more
Add lemon juice, thyme and salt and pepper. Reduce heat to medium-low and add rice and the remaining butter
Stir in mushrooms. Cook for 5 minutes or until mushrooms are golden.
Spoon into bowls and top with Parmesan cheese and parsley. Serve warm
