Mixed Mushroom Strudel
Serves: 4
Preparation: 15 minutes
Cooking: 45 to 50 minutes
Ingredients
4 handfuls of mixed mushrooms, sliced
2 brown onions, diced
1 leek, sliced
3 garlic cloves, minced
1/2 handful fresh chopped chives
1 packet filo pastry
150g of lite cream cheese
150g Crème fraîche
Olive oil spray
Pepper to taste
Method
Preheat oven to 180°C
In a heated pan with a little oil add the garlic, onions and leek and cook for about 5 minutes or until softened. Add the mushrooms and cook until softened
Add in the fresh chives, cream cheese and crème fraîche and stir until combined then remove from heat
Lay 2 sheets of filo pastry onto a clean surface and spray with olive oil, neatly top with another 2 pastry sheets and repeat until you have 6 sheets prepared
Spread mushroom mixture at one end of the pastry, leaving about a 3cm space from the edge. Roll into a tight cylinder, tucking in the ends as you go
Repeat until you have used all the mushroom mixture (makes 2 or 3 strudels)
Bake for 30 to 35 minutes until the pastry is golden
Cut into slices and serve with a crisp green salad
