Moroccan Spiced Roasted Carrots

Moroccan Spiced Roasted Carrots

Ingredients
12-14 medium sized carrots, peeled
4 tablespoons olive oil
½ teaspoon ground cumin
½ teaspoon paprika
¼ teaspoon cinnamon
¼ teaspoon salt
3 tablespoons sour cream
1 tablespoon lime juice
¼ cup fresh coriander
1/3 cup pistachios, roughly chopped (optional)
Method
Preheat oven to 180°C fan bake. Line an oven tray with baking paper
Place the carrots on the oven tray and drizzle with olive oil
In a small bowl combine the cumin, paprika, cinnamon and salt. Sprinkle over the carrots
Bake until tender – about 15-20 minutes
Combine sour cream and lime juice in a small bowl
Place carrots on a platter or bowl and top with sour cream mixture, coriander and pistachios
