Mushroom Quesadillas

Mushroom Quesadillas

Cooking: 5-10 minutes
Ingredients
2 handfuls of mushrooms, wiped clean and sliced (we used mixed varieties)
½ red chilli, finely diced
1 clove garlic, crushed, finely diced
1 tablespoon olive oil
4 tortillas
2 handfuls spinach
Cheese for sprinkling
Sprigs of fresh oregano or thyme
Method
Heat the oil in a pan over a medium heat. Sautéthe mushrooms with the chilli and garlic until cooked
Place two tortillas on a flat board. Arrange the mushroom mixture to cover each tortilla, place the spinach over the mushrooms and sprinkle with cheese. Cover with the remaining two tortillas
In a clean pan over a medium heat, cook the quesadillas for a few minutes each side until the cheese has melted and the tortillas are golden
Garnish with sprigs of fresh oregano or thyme (or herbs of choice)
These make a great lunch or dinner served with a green salad
