Nashi Pear Salad with Mandarin Dressing

Ingredients
2 Nashi pears, cut into match sticks
1 ½ cups red cabbage, thinly sliced
1 red capsicum, core removed, thinly sliced
1 cup cucumber, cut in half & thinly sliced
1 mandarin, peeled and separated into segments
1 carrot, cut into matchsticks or julienne
¾ cup edamame, shelled
½ cup coriander, finely sliced
Dressing
Zest of 1 mandarin
Juice of 1 mandarin
3 tablespoons white vinegar
1 tablespoon olive oil
1 teaspoon fresh ginger, finely grated
¼ teaspoon salt
Method
In a large bowl, combine all the salad ingredients
In a small bowl, combine the dressing ingredients and whisk until it thickens. Pour the dressing over the salad. Enjoy!
