Persimmon Salad

Ingredients
3 persimmons, peeled, sliced
½ red onion, thinly sliced
6 handfuls baby spinach, or mixed greens
Seeds from 1 pomegranate
1/2 cup goat cheese, crumbled
Dressing
1 tablespoon Dijon mustard
¼ cup olive oil
1 tablespoon honey
3 tablespoons white wine vinegar
¼ teaspoon salt
¼ teaspoon pepper
½ teaspoon cumin
Method
In a medium bowl combine the salad ingredients
In a small jar or glass combine the dressing ingredients and mix well. Pour dressing over the salad and mix well
