Pineapple and Ginger Smoothie

Pineapple and Ginger Smoothie
Serves: 3 to 4
Preparation: 10 minutes

Ingredients
1 cup fresh pineapple pieces
2 bobby bananas
2cm piece of ginger, chopped (or use 2/4 tsp minced ginger)
1/3 cup natural yoghurt
1/2 cup unsweetened coconut milk
Dash of vanilla extract
Pinch of salt
Method
Combine all the ingredients in a blender and blend until smooth and creamy
Garnish with pineapple, mint leaves and coconut threads
NB:
- For a thicker, more slushy style version, freeze the pineapple and banana before adding to the smoothie.
- For a green vege boost, add a handful of spinach or kale
- For a lighter smoothie, use coconut water instead of coconut milk.
