Quinoa Salad with Lemon, Shallots and Herbs

Ingredients
1 ¼ cup quinoa, rinsed and drained
2 cups water
Pinch salt
1 ½ teaspoons ground cumin seeds
2 garlic cloves, minced
1 teaspoon dried oregano
2 shallots or 1 red onion, thinly sliced
1 tablespoon olive oil
Garnish:
Zest of 1 lemon
Handful of parsley, chopped
Handful of dill, chopped
¼ cup sliced almonds
2 tablespoons olive oil
Method
In a medium pot, over medium heat, sauté the shallots in oil for 2-3 minutes and set aside.
Add the quinoa, water, salt, cumin, garlic and dried oregano and stir well. Bring to a boil.
Reduce heat to low, cover, and simmer for 15 minutes or until water is absorbed. Turn off heat and let sit for 10 minutes.
Fluff with a fork and add to a serving bowl with lemon zest, herbs, shallots, almonds and oil. Serve immediately.
