Roasted Cabbage with Balsamic Dressing

Roasted Cabbage with Balsamic Dressing
Serves: 6 to 8 as a side
Preparation: 10 minutes
Cooking: 15 minutes
Ingredients
1/2 white cabbage, cut into 4 wedges
1/2 red cabbage, cut into 4 wedges
Dressing
1 Tablespoon dried tarragon
Juice of half a lemon
1 Tablespoon balsamic vinegar`
2 Tablespoons honey
2 Tablespoon extra virgin olive oil
Cracked black pepper
Method
Preheat oven to 160°C
Add all dressing ingredients in a small bowl and stir to combine
Place cabbage wedges on a lined roasting dish then pour over dressing
Roast for 15 minutes or until tender and browned slightly
Serve with a green salad
