Roasted Yams with Orange Glaze
Serves: 4
Preparation: 5-10 minutes
Cooking: 25 minutes
Ingredients
800g yams
1 tablespoon olive oil
Glaze
½ Navel orange, rind & juice
1 tablespoon maple syrup or honey
¼ teaspoon ground cinnamon
1 tablespoons olive oil
Pinch salt & whilte pepper
Garnish
Slices of Navel orange
Handful of fresh parsley, chopped
Method
Heat oven to 200°C
Wash yams and spread on a baking tray. Drizzle with olive oil and roast in the oven for around 25 minutes until tender and golden. Turn every 10 minutes
While the yams are roasting, whisk together the glaze ingredients. Set aside
Once the yams are cooked. Pour over the glaze and gently toss. Place in a serving tray and garnish with orange slices and fresh parsley. Serve warm
