Rock and Honey Dew Melon Salad with Bocconcini

Ingredients
1/2 Honey Dew melon, scooped into balls (using melon baller)
1/2 Rock melon, scooped into balls
Fresh mint
1 punnet bocconcini (baby mozzarella), torn in half
8 slices prosciutto
Method
Arrange melon balls on a serving platter, then tuck in bocconcini and prosciutto between the balls. Scatter mint leaves on top
Refrigerate until ready to serve
