Spicy Garlic Chickpea Salad

Ingredients
1x 400g can of chickpeas, drained and rinsed
½ cup diced cucumber
1 capsicum, diced
½ red onion, finely chopped
1 large handful parsley, roughly chopped
1 fresh chilli, de-seeded and finely chopped
Dressing ingredients
3 cloves garlic, crushed
3 tablespoons olive oil
3 tablespoons white wine vinegar
Pinch salt & freshly ground black pepper
Method
Mix olive oil, white wine vinegar, garlic, salt and pepper together in a small bowl. Set aside
In a large bowl combine the chickpeas, cucumber, capsicum, red onion, parsley and chilli. Drizzle over dressing, stir gently to combine and serve
