Tomato & Feta Tart

Ingredients
2 cups cherry tomatoes, halved
½ cup feta cheese, crumbled
10 filo pastry sheets
3 tablespoons oil
2-3 tablespoons balsamic drizzle
Fresh herbs for garnish
Pinch salt & freshly ground pepper
Method
Pre heat the oven to 180°C on fan bake. Line an oven tray with baking paper
Place 1 filo sheet on the lined oven tray. Lightly brush filo sheet with oil, and top with another filo sheet. Repeat layers with remaining filo sheets and oil
Cover the pastry with tomatoes and feta cheese. Sprinkle with salt & pepper and bake for 20–25 minutes or until the filo is crispy. Sprinkle over the balsamic drizzle and fresh herbs to garnish. Enjoy warm
