Apple Breakfast Pots

Ingredients
3 Gala apples, cored and cubed
70g dates, chopped
½ teaspoon cinnamon
¼ teaspoon allspice
¼ teaspoon mixed spice
Juice of half a lemon
70g rolled oats
1 tablespoon wholemeal flour
30g ground almonds
1 ½ tablespoon brown sugar
35g butter
30g walnuts, chopped (optional)
Greek yoghurt to serve
Method
Heat oven to 175°C. Mix the chopped apple and dates in a bowl with the lemon juice until the apple pieces are coated. Stir through the spices and divide the mixture into 4 ovenproof ramekins
In the same bowl mix together the rolled oats, flour, ground almonds and brown sugar until well combined. Rub the butter into the oat mixture to make a crumbly texture that holds together when you pinch it between your fingers. If using the walnuts, stir them through the oat mix, then divide the mix over the top of the apple
Bake the pots for 35-40 minutes or until crisp and golden brown on the top. Remove from the oven and leave to cool for 10 minutes before serving with a generous dollop of Greek yoghurt.
