Apple & Cinnamon Pancakes

Apple topping ingredients
2 gala apples, diced into small cubes
2 tablespoons butter
½ teaspoon cinnamon
1/3 cup maple syrup
Pancake ingredients
¾ cup milk
1 cup flour
4 tablespoons brown sugar
1 teaspoon cinnamon
1 teaspoon baking powder
½ teaspoon baking soda
1 egg
Light olive oil
Method
Preheat a skillet or pan to medium heat and turn oven on to 100°C
In a bowl, mix-together flour, sugar, cinnamon, baking powder and baking soda. Add egg, oil, and milk and whisk to combine
Add a little oil to the skillet and pour in enough batter to make a pancake. Cook for 1-2 minutes on each side or until golden. Keep pancakes warm in the oven and repeat until batter is finished
Add apples, butter, cinnamon, and maple syrup to the pan
Cook for 3-5 minutes or until apples are softened. Serve over warm pancakes
