Apple & Cinnamon Muffins

Apple & Cinnamon Muffins

Cooking: 15-20 minutes
Ingredients
1 cup grated apple
1 cup apple, diced into small cubes
1 ¾ cups whole wheat flour
1 ½ teaspoons baking powder
1 ½ teaspoons ground cinnamon
½ teaspoon baking soda
Pinch salt
1/3 cup olive oil
½ cup maple syrup
2 free range eggs
½ cup Greek yoghurt or coconut yoghurt
1 tablespoon coconut sugar (optional for sprinkling on top)
Method
Preheat the oven to 180°C fan bake. Grease a muffin tray or line each hole with a square of baking paper
In a large mixing bowl, combine the flour, baking powder, cinnamon, baking soda and salt. Add the grated apple and cubed apple, combine all the ingredients
In a separate bowl, combine the olive oil, maple syrup and eggs. Beat together and then add in the yoghurt
Pour the wet ingredients into the dry mixture and mix. Divide the batter evenly between the 12 muffin cups. Sprinkle the muffins with coconut sugar
Bake the muffins for 15-20 minutes, or until the muffins are golden on top and a toothpick inserted comes out clean
Place the muffins on a cooling rack. Store in an airtight container in the pantry
