Asparagus Salad with Fresh Lemon Dressing
Serves: 6 as a side
Preparation: 10 Minutes
Cooking: 5 Minutes
Ingredients
2 bunches asparagus, ends trimmed
1 small head romaine lettuce, trimmed and sliced in half
80g snow peas
1 cup fresh or frozen peas
50g feta cheese
1 handful fresh mint leaves
Dressing
Zest of 1 lemon
Juice of 1 lemon
4 tablespoons olive oil
Pinch of salt
2 tablespoons white wine vinegar
Method
In a large saucepan, add water and bring to boil. Add asparagus and peas and blanch for 2 minutes
Remove from the pot and place in a bowl to cool. Once cooled, cut asparagus into thirds
In a small bowl, add dressing ingredients and mix well
In a bowl or plate, add romaine lettuce, snow peas, peas, and asparagus
Top with mint leave and feta cheese. Drizzle with salad dressing and serve
