Asparagus, Strawberry & Rocket Salad

Ingredients
2 bunches of asparagus, ends trimmed
3 cups rocket
2 cups fresh strawberries, stalks removed and sliced in half
50g feta cheese, crumbled
1 spring onion, chopped finely
¼ cup sliced almonds
Dressing
Juice from 1 lemon
2 tablespoons olive oil
1 tablespoon maple syrup or honey
Pinch of salt & pepper
Method
Bring a large pot of water to boil over medium heat. Add the asparagus to the boiling water and cook for 2 or 3 minutes. Drain the asparagus and allow to cool
In a large bowl, combine asparagus, rocket, strawberries, feta cheese, spring onion and almonds
In a small bowl, mix the lemon juice, olive oil, maple syrup or honey and salt and pepper
Pour the dressing over the salad and toss lightly. Serve immediately
