Asparagus & Tofu Stir-fry

Asparagus & Tofu Stir-fry
Serves: 4-6 as a side
Preparation: 10 Minutes
Cooking: 20 Minutes
Ingredients
2 bunches asparagus, ends trimmed, cut into thirds
300g tofu, sliced
2 tablespoons olive oil
2 tablespoons sesame seeds
2 cloves garlic, minced
1 teaspoon ginger, minced
1 red capsicum, finely sliced
1 tablespoon white wine vinegar
1 tablespoon soy sauce
Method
Heat a fry pan over medium heat and add 1 tablespoon of olive oil
Cut sliced tofu into quarters and add to fry pan. Leave to cook for around 7 minutes each side or until crispy. Remove tofu and allow to cool in a bowl
Toast sesame seeds in the pan and set aside
Add the remaining olive oil to the pan with garlic, ginger, capsicum, and asparagus. Cook for 3 minutes and then add the soy sauce and white wine vinegar. Turn down the heat and cook for a further 3 minutes until asparagus is tender
Add asparagus and tofu to a serving bowl or plate and sprinkle with sesame seeds. Serve warm
