Avocado Breakfast Tacos

Ingredients
1 avocado, sliced lengthwise
Juice of 1 lemon or lime
1 tomato, diced
Fresh parsley or coriander leaves
4 tortillas
3 eggs, whisked
4 cups spinach
Black pepper
Drizzle olive oil
Dried chilli flakes (optional)
Method
Heat a skillet over medium heat and add olive oil
Add spinach and pepper and sauté until the spinach is wilted. Place into a bowl and keep warm
Add eggs, stir and scramble until cooked. Place into a bowl and keep warm
Clean the skillet and place over a medium heat. Warm the tortillas one by one in the skillet for 20 seconds each side
Divide the scrambled eggs and spinach between the tortillas. Add avocado, lemon or lime juice, tomato and pepper
Serve warm garnished with fresh parsley or coriander leaves and a sprinkle of chilli flakes
