Baby Breakfast Potatoes with Baked Eggs

Cooking: 40-45 Minutes
Ingredients
750g baby potatoes, cut into bite-sized pieces
1 red onion, cut into wedges
100g chorizo, sliced (optional)
1 teaspoon smoked paprika
1 teaspoon cumin seeds
4 eggs*
Olive oil
Black pepper
To serve
½ cup fresh coriander, finely chopped
¼ cup feta cheese, crumbled
Zest of 1 small lemon
Pinch of chilli flakes
Method
Preheat the oven to 180°C fan bake
Place the baby potatoes, red onion, and chorizo on a baking tray, sprinkle over the paprika, cumin seeds and pepper
Drizzle over olive oil, toss well and cook in the oven to cook for 30-35 minutes until golden brown and the potatoes are cooked through
Remove from the oven and move the potatoes to create four shallow nests in the potatoes. Crack one egg into each nest
Return potatoes and eggs to the oven and cook for 10 minutes until the whites have just set and the yolks are still runny
Remove from the oven and garnish with fresh coriander, feta, lemon zest and chilli flakes
*Note: you can add more eggs if you’d like more than one each
