Baked Tomatoes with Fresh Herbs
Serves: 2-3
Preparation: 5 minutes
Cooking: 10 minutes
Ingredients
4 tomatoes, halved (we used Roma tomatoes)
¼ cup fresh parsley, chopped
¼ cup fresh basil chopped
1 stalk fresh thyme leaves
1 stalk fresh rosemary, chopped
¼ cup shredded mozzarella cheese
¼ cup shredded Parmesan cheese
Method
Preheat oven to 200ºC
Place tomatoes on a baking tray. Top each tomato half with a pinch of Parmesan and mozzarella cheeses
Sprinkle with rosemary and thyme. Bake for 10 minutes. Add basil and parsley before serving
