Cherry & Goats Cheese Crostini

Ingredients
2 cups cherries, pitted and halved
12 slices baguette
75g goats cheese
Handful mint leaves
¼ teaspoon black pepper
2 tablespoons olive oil
Dressing
3 tablespoons balsamic vinegar
2 tablespoons olive oil
Method
Preheat oven to 180° degrees
Place baguette slices onto an oven tray and brush with olive oil. Bake for 7-10 minutes or until slightly golden
In a small bowl combine cherries, and dressing and leave for 10 minutes
Once the crostini have cooled, spread goats cheese on each piece. Spoon cherry mixture over the crostini and top with mint leaves
Sprinkle with pepper and serve
