Christmas Berry Curd Tart

Preparation: 30 Minutes and 4 hours in refrigerator
Cooking: 30 Minutes
Ingredients for berry curd
2 cups fresh strawberries or berries of choice, stems removed
½ cup brown sugar
2 eggs
2 egg yolks
Juice of 1 lemon
4 tablespoons butter, softened
1 cup fresh berries for topping
Mint for garnish
Ingredients for crust
1 cup all-purpose flour
½ cup icing sugar
110g butter, melted
Method to make the crust
Preheat oven to 180°C. In a bowl, whisk together the flour and icing sugar
Add the butter and stir together until thoroughly combined
Press the dough evenly into the bottom and sides of a 20cm tart pan with a removable base
Place the tart pan on an oven tray and bake for 20 minutes or until the crust is golden
Method to make the berry curd
Coarsely chop the berries and place them into a small saucepan over a medium heat. Add sugar and lemon juice
Bring berries to a boil and reduce to a simmer. Cook for around 7 minutes, stirring occasionally. Remove from heat and allow to cool
Pour the berries into a food processor and blend until smooth
Return berries to the saucepan and add the whole eggs and egg yolks. Whisk to combine
Place the saucepan over a medium heat and cook for 10 minutes. Stir mixture until it begins to thicken
Remove from the heat and add the butter and stir well
Pour mixture into a bowl and place in the fridge for 4 hours
Pour curd into the crust and top with extra berries and fresh mint leaves
