Citrus Ginger Carrot Salad

Ingredients
10 carrots, grated or shredded
1 capsicum, deseeded, chopped
1 cup parsley, roughly chopped
1 spring onion, sliced
½ cup raw cashew nuts or peanuts
2 tablespoons sesame seeds
Dressing
Juice of 1 lemon
Juice of 1 lime
1 teaspoon freshly grated ginger
2 garlic cloves, minced
2 tablespoons soy sauce or tamari
¼ cup olive oil
Method
In a small bowl, mix-together dressing ingredients
In a large bowl or plate, combine the grated carrots, capsicum, spring onion and parsley
Drizzle the dressing over the salad and top with cashew nuts and sesame seeds
