Feijoa Scones with Berry and Feijoa Jam
Serves: Makes 10 Scones

Ingredients
4 feijoas, peeled and chopped into small pieces
3 cups plain flour
2 tablespoons sugar
3 ½ teaspoons baking powder
7 tablespoons butter, cold, cubed
2 eggs
100ml cold milk
Jam
1 cup berries
3 feijoas, peeled
2 tablespoons honey
2 tablespoons chia seeds
To Serve
Whipped lite cream (optional)
Method
Preheat oven to 180°C on fan bake
Place the flour, sugar and baking powder into a bowl and stir
Add the cubed butter and rub it into the dry ingredients using your fingers
Make a well in the middle of the flour mixture and add the eggs and milk. Stir together to form a messy, sticky dough
Add the chopped feijoas and stir well
Flour a work surface and tip contents of the bowl out. Pat or roll the dough into a rectangular shape approximately 2cm thick
Cut into rounds using a floured glass and place scones onto an oven tray
Bake for 15 minutes or until cooked through
While the scones are baking, place jam ingredients into a blender and blitz until pulpy
Serve scones warm with the berry and feijoa jam and whipped lite cream
