Fresh Herb & Quinoa Salad
Serves: 4
Preparation: 10 minutes
Cooking: 15-20 minutes
Ingredients
1 cup parsley, chopped
1 cup coriander leaves, chopped
¼ cup fennel fronds
2 cups baby spinach, chopped
1 cup cherry tomato, chopped
2 spring onions, sliced
¼ red onion, sliced
½ cup quinoa, rinsed
¼ cup sliced Parmesan cheese
Dressing
Juice of 1 lemon
2 tablespoons olive oil
2 tablespoons white wine vinegar
2 garlic cloves, minced
Pinch salt & pepper
Method
Cook the quinoa according to packet directions. When cooked, allow to cool
Place all dressing ingredients into a bowl and mix well
Place quinoa and all salad ingredients except the Parmesan cheese into a large bowl and combine. Just before serving, drizzle dressing over salad and top with Parmesan cheese
