Ginger, Lemon and Vanilla Poached Pears

Ginger, Lemon and Vanilla Poached Pears
Serves: 6
Preparation: 10 minutes
Cooking: 30 to 40 minutes
Ingredients
6 pears, peeled
3 cups of water
1 cup sugar
1 vanilla pod
3cm piece of ginger, sliced thinly
2 lemons, sliced
Method
Peel pears leaving stalk intact
Heat water and sugar until sugar is dissolved then add vanilla pod, fresh ginger and lemon
Add peeled whole pears to simmering water for about 30 minutes
Remove from water once cooked and place on serving platter
Drizzle pears with poaching syrup and serve with a dollop of Greek yoghurt
