Herbed Potato Salad

Herbed Potato Salad
Serves: 4-6
Preparation: 10 minutes
Cooking: 10-15 minutes
Ingredients - Wash all vegetables & herbs
800g potatoes, sliced
1/3 cup flat leaf parsley, roughly chopped
¼ cup dill, roughly chopped
1/3 cup spring onion, chopped
¼ cup olive oil
2 tablespoons fresh lemon juice
2 tablespoons Dijon mustard
2 cloves garlic, crushed
Pinch salt & freshly ground pepper
Method
Place the potatoes in a large saucepan. Cover with water and add a pinch of salt. Bring to a boil over high heat, then reduce heat to medium-low and cook until potatoes are tender - about 10 minutes
Drain potatoes and transfer to a large serving bowl
In a small bowl combine the mustard, olive oil, parsley, dill, lemon juice, spring onion, garlic, salt & pepper
Drizzle the dressing over the potatoes and gently mix to combine
Serve immediately or refrigerate until you’re ready to serve
