Kiwifruit & Banana Bread

Ingredients
3 kiwifruit, peeled and thinly sliced
2 ripe bananas, mashed
2 eggs
1/3 cup maple syrup
1/3 cup butter, melted
1/4 cup natural yoghurt
Pinch salt
1 ½ cups all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon cinnamon
1 teaspoon ground ginger
Method
Heat oven to 180°C and oil a loaf pan
In a bowl, beat the eggs the add the butter and maple syrup. Mix well
Add the mashed bananas, yoghurt, baking soda, baking powder, cinnamon, ginger, salt and flour. Mix well
Pour the batter into the loaf pan and top with kiwifruit
Bake for 50 minutes or until a knife inserted comes out clean. Let the bread cool on a wire rack before serving
