Lemon and Garlic Roasted Brussels Sprouts

Ingredients
450g Brussels sprouts
2 medium lemons, halved
4 cloves garlic
3 tablespoons olive oil
Pinch of salt & freshly ground pepper
Method
Preheat the oven to 200°C on fan bake. Line an oven tray with baking paper
Trim and halve the Brussels sprouts and place on oven tray with garlic cloves. Season with olive oil, salt and pepper and toss to combine. Add lemon halves cut-side down
Roast for 15 minutes. Flip the Brussels sprouts and roast until crispy on the outside and tender on the inside for 10-15 minutes longer. Peel the garlic and squeeze the lemon juice over the Brussels sprouts. Toss gently and serve warm
